The Winemaker's Labels

A winemaker will see his wines as a varied collection, with each category of wine bringing different and unique characteristics to the bottle.  Here's a guide to our winemaker's labels.
Ice Wines

​Pressing the grapes at -8˚ C or colder allows all the sugar, acids & flavour components to slowly drip out, leaving behind the berries’ water content as ice crystals in the press. The result is a natural and intense concentration. The icewine taste, being such an explosion of intense fruit flavours, greatly exceeds the anguish of letting perfectly mature grapes hang on the vine, gambling whether a freeze (-8˚ C) will arrive soon enough. Once tried, hooked forever.
Late Harvest Wines

​Grapes left on the vine after their normal harvest date will shrivel and create more complex and concentrated flavours.


Can be enjoyed with most desserts, or as a treat by itself.
The Classics 
​
A selection of new and old varieties, chosen for their excellent adaptation to our vineyard, producing rich delicate fruit flavours. The medium-dry wines have a rich texture, and connoisseurs are amazed how clean and dry these wines finish. A paradox, but true; a definite must taste and compare.
​Optimum Series

​Only those lots of wine that distinguish themselves as special are selected for the Optimum line.  Not every vintage will necessarily create a wine worthy of the Optimum status.

Optimum wines will elevate your dining experience to new heights.
Private Reserve

Every harvest brings the thrill of discovery.  The private reserve wines are the results of that discovery, revealing the best that the varietal has to offer.

 Dry Rock Vineyards

​In the heart of North America’s most northern desert, is the home of Dry Rock Vineyards. This vineyard is known for its unique microclimate, southern exposure and rocky soils. Maintaining lower crop levels, offers higher concentrations of intense flavours.
The Blends

​Evoking the best of our lives:  Desert Sun and Summer Night.  These wines allow the winemaker to capitalize on the best that each grape variety has to offer. By selecting two or more complementary varieties & carefully blending them, a more consistent wine can be achieved from vintage to vintage. A true cuvée has more complexity than the individual wines used.
